Vegetarian Taco Salad

Ingredients

1 cup black beans, drained and rinsed

2 cups Romaine lettuce, torn

1 cup tomatoes, diced

1 cup reduced-fat Cheddar cheese, shredded

1/4 cup chili peppers

1/4 cup reduced-fat sour cream

1 cup salsa

40 corn tortilla chips, baked

Preparation

01Mix black beans, lettuce, tomatoes, cheese, chili peppers and sour cream in a large salad bowl. Toss to mix well.
02Add salsa and toss again.
03Serve on bed of tortilla chips.
