About Strawberry Yogurt Oatmeal Breakfast Bars

These delicious and healthy strawberry yogurt oatmeal breakfast bars are the perfect way to start your day. Made with oats, Greek yogurt, and fresh strawberries, then topped with more strawberries and chocolate chips for a delicious and nutritious treat. They are easy to make ahead and store in the refrigerator for up to a week, making them a great option for on-the-go breakfasts or snacks!

 

Ingredients for bars

1 cup whole wheat flour or all-purpose flour

1 cup old fashioned rolled oats

3/4 cup sugar

1/2 teaspoon baking powder

1/2 cup (1 stick) unsalted butter, cut into 1/2-inch pieces

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Ingredients for filling

2 cups plain Greek yogurt

3 tablespoons sugar

3 tablespoons cornstarch

2 cups strawberries, hulled and sliced

Preparation

01For bars: Preheat oven to 350°F and line a 9”x13” baking pan with parchment paper. Whisk flour, oats, sugar and baking powder together in large bowl. Add butter and vanilla and combine with a pastry blender or fork until coarse crumbs form. Set aside 1 cup of oat mixture for topping bars.
02For filling: Whisk yogurt, sugar and cornstarch together in large bowl until smooth. Fold in strawberries until combined.
03Press remaining oat mixture firmly into bottom of prepared baking pan. Spread yogurt mixture in an even layer over oat mixture. Sprinkle reserved oat mixture over yogurt mixture.
04Bake until light golden brown and set, about 40 to 45 minutes. Let cool completely at room temperature.
05Meanwhile, microwave chocolate chips in small microwave safe bowl in 30-second increments, stirring between each increment until melted and smooth. Drizzle chocolate over bars. Cover baking pan with plastic wrap and refrigerate for 2 hours before slicing into bars and serving.
