Ingredients for Dressing

3 cups fresh strawberries (sliced in half)

3/4 cup apple cider vinegar

1 tablespoon maple syrup

1 tablespoon fresh lemon juice

1 cup plain Greek yogurt

1 tablespoon dried mustard

1 1/2 cup olive or avocado oil

Ingredients for Salad

16 ounces mix greens

16 ounces spinach

Fresh strawberries, to garnish

1 cup halved mozzarella balls

1/2 cup of chopped walnuts


01In a blender, puree strawberries, vinegar, maple syrup and lemon juice, yogurt, and dried mustard.
02Slowly add avocado oil to strawberry mixture to emulsify. Chill for 30 minutes.
03Place mixed greens and spinach in a stainless bowl and toss with dressing.
04Garnish with fresh strawberries, mozzarella, and walnuts.
