Protein Beef Taco Skillet with Chipotle Yogurt Sauce

About Protein Beef Taco Skillet with Chipotle Yogurt Sauce

This protein-packed beef taco skillet combines seasoned ground beef, black beans, tomatoes, peppers and melted cheddar cheese in one hearty dish. Finished with a creamy, smoky chipotle yogurt sauce, fresh cilantro and avocado, it’s an easy, flavorful dinner the whole family can enjoy!

Ingredients for Beef Taco Skillet

1 tablespoon oil or butter

1 small red onion, minced

1/2-1 jalapeno or serrano pepper, minced

4 cloves garlic, minced

1 large bell pepper, sliced

1 lb ground beef

1 can black beans, drained

28 oz can crushed tomatoes

1 1/2 cups cheddar cheese, grated

juice from 1/2 lime

1/2 cup cilantro, finely chopped

2 teaspoons cumin

2 teaspoons chili powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon oregano

1-1 1/2 teaspoons salt

black pepper to taste

Ingredients for Chipotle Yogurt Sauce

1 cup greek yogurt

1-2 chipotle peppers from can chipotle peppers in adobo sauce

1 clove garlic

1/2 tablespoon maple syrup

1 teaspoon olive oil

juice from 1/2 lime

1/4 teaspoon salt

1-2 tablespoons water to thin out sauce based on your preferred thickness

Additional Toppings

Cilantro, chopped

Avocado, sliced

Tortilla chips

Preparation

01Add all chipotle yogurt ingredients to a food processor or blender and blend until smooth. Set aside.
02Add oil to a skillet over medium heat. Add onion, bell pepper, jalapeno and garlic. Cook for 3 minutes. Add ground beef and seasonings. Cook for about 5 minutes until the ground beef is browned.
03Add all remaining ingredients to the skillet except for the cheese and stir to combine. Bring to a simmer and cook for 10-15 minutes. Turn off heat and top with cheese.
04Turn on the broiler to the oven and add the skillet to the oven. Cook for 3-5 minutes, until the cheese is bubbly.
05Top skillet with yogurt sauce and additional cilantro. Divide out and serve with chips and avocado.
