4 tablespoons butter
1 small white onion, diced
1 small green chili, diced (more per taste)
6 cloves garlic, minced
3 cups mushrooms, sliced
3 cups spinach, roughly chopped
4 large flour tortillas
8 ounces brie cheese, softened
Hot honey or salsa
01Add 2 tablespoons of butter to a pan on medium heat.
02Sauté the onion, green chili, and garlic for a minute.
03Add in the mushrooms and let them cook down for about 4 minutes until soft.
04Then add in your spinach and cook for 3-4 minutes until it wilts. Add salt and black pepper per taste.
05Once everything is cooked, add the mixture into a bowl.
06Start assembling the quesadillas by adding a little bit of the remaining butter to the pan and a tortilla.
07On one half of the tortilla, add the mushroom and spinach mixture, followed by some brie cheese.
08Close up the tortilla and let it cook on both sides.
09Repeat with the rest of the tortillas. Cut each quesadilla into thirds, serve with hot honey or salsa!
