Mediterranean Tomato-Arugula Dip

Ingredients

3 gloves garlic, crushed in a garlic press

3 tablespoons butter

1 1/2 cups seeded and diced plum tomatoes

3/4 cup tomato juice (or vegetable broth)

1 tablespoon tomato paste

1/2 teaspoon salt

1/2 teaspoon pepper

1 1/2 cups coarsely chopped arugula, cleaned and stems removed

1/4 cup grated parmesan cheese

Optional Garnish: Cubed feta, colby and mozzarella

Breadsticks and cubed crusty bread

Preparation

01In a medium-size saucepan over medium-high heat, sauté garlic in butter until fragrant. Add tomatoes and cook about 3 minutes.
02Mix in tomato juice, tomato paste, salt and pepper and reduce heat to medium-low to simmer, about 15 minutes. Stir in arugula and Parmesan cheese.
03Keep dip over warm burner and serve immediately with optional garnish for dipping.
