6 medium sweet potatoes, peeled and cubed
1 tablespoon of butter
1/3 cup orange juice
1/3 cup milk
1 tablespoon orange zest
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
Salt & pepper to taste
01Bring a large pot of salted water to a boil. Add sweet potatoes and cook for 20-25 minutes until tender.
02Drain sweet potatoes and put in a medium bowl. Add butter, orange juice, milk, orange zest, brown sugar, cinnamon and ginger. Mash with a mixer until smooth.
