Mashed Sweet Potatoes with Feta & Cranberries

Ingredients

3 large sweet potatoes, peel and cubed (about 6 cups)

4 tablespoons butter

1/2 cup heavy whipping cream

1/4 cup Feta cheese, crumbled

1/8 cup dried cranberries

1 tablespoon honey

Preparation

01Bring a large pot of salted water to a boil.
02Meanwhile, peel and cube the sweet potatoes.
03Add the sweet potatoes to the pot of boiling water and cook until fork-tender, about 10-15 minutes. Drain, and transfer to a mixing bowl.
04While the potatoes are boiling, add the butter and heavy whipping cream to a small pot over low heat to melt the butter and warm the mixture.
05Using a potato masher or electric mixer, blend the warm butter mixture into the sweet potatoes until the desired consistency is reached.
06Transfer the mashed sweet potatoes to a serving bowl and top with the crumbled goat cheese and cranberries.
07Drizzle on the honey and serve warm.
