Cheesy Potato Bake

4 large unpeeled potatoes

1/4 cup butter

1 teaspoon salt

1/2 teaspoon thyme

1/8 teaspoon pepper

2 cups shredded cheddar

1 tablespoon parsley


01Preheat oven to 425 degrees.
02Thinly slice the potatoes and place in a greased shallow 12 quart baking dish.
03In a microwave safe bowl, heat butter, salt, thyme and pepper until butter is melted. Drizzle over the potatoes.
04Cover and bake for 45 minutes. Remove from oven and sprinkle with cheese and parsley. Bake uncovered for 10 additional minutes, until cheese is melted.
