Cheesy Potato Soup

Ingredients

4 cups water

4 cups potatoes, peeled and diced

1 1/2 teaspoon salt

1/2 teaspoon pepper

1 can cream of celery soup

2 cups diced ham

1 cup (2 sticks) butter

1/2 cup flour

4 cups milk (any variety)

Pinch of red pepper, optional

2 cups (8-ounces) shredded cheese (your favorite flavor, reduced fat or regular)

Garnish: chopped chives, green onions, crisp bacon bits and shredded Cheddar cheese

Preparation

01Heat potatoes in 4 cups of water. Add salt and pepper.Boil until potatoes are soft. The water will be almost gone.
02Add cream of celery soup and ham. Heat mixture thoroughly over medium heat.
03In a separate pan, melt butter over medium heat.
04Gradually stir in flour into melted butter, whisking constantly until flour is incorporated and the mixture is smooth.
05Add milk. Heat over medium low heat, stirring occasionally, until milk mixture thickens, about 5 minutes.
06If desired, to ‘kick it up a notch,’ add red pepper.
07Stir milk mixture into potato mixture.
08Remove soup from heat. Stir in cheese, mixing until cheese is melted.
09Ladle soup into bowls and top, as desired, with chives, green onions, bacon and/or shredded Cheddar cheese.
