Ham, Mac & Cheese Soup

Ingredients

4 ounces (1 ½ cups) uncooked dried small macaroni shells

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon Dijon style mustard

1 (14 oz.) can chicken broth

1.5 cup milk

1 8 (oz.) slice (about an inch thick) American cheese cut into 1-inch cubes (the more, the creamier)

1 cup finely diced ham

salt and pepper, if desired

Preparation

01Cook macaroni according to package directions; set aside. Melt butter in 3-quart saucepan until sizzling; stir in flour and mustard. Add broth and milk. Cook over medium-high heat, stirring constantly, until mixture comes to a boil. Reduce heat to low; stir in cheese until melted. Stir in drained macaroni and ham. Cook until heated through (4 to 5 minutes). Salt and pepper to taste, if desired.
