4 ounces sharp white cheddar cheese, diced in small cubes
1 large egg, lightly beaten
Ingredients for Sauce
1/4 cup ketchup
1/4 cup brown sugar
1 tablespoon Worcestershire sauce
01Preheat oven to 425 degrees F. Lightly spray broiler pan with cooking spray.
02In a large skillet over medium-high heat, melt butter. Add onion and garlic and sauté until translucent. Set aside.
03In a large mixing bowl, combine onion mixture, ground beef, breadcrumbs, ketchup, Parmesan cheese, mustard, seasonings, cheese and egg. Be careful not to over-mix by using your hands or spoon to mix. Shape into 6 (4 x 2-inch) loaves and place on broiler pan.
04In a small bowl, mix together the ketchup, brown sugar and Worcestershire sauce and spread evenly over each mini meatloaf. Bake for 25 minutes.
