Ingredients

Nonstick cooking spray (for pan)

3 cups grated zucchini

1 cup Bisquick

1/2 cup grated onion

1/2 cup grated Parmesan cheese

1/2 cup Colby-Jack cheese

1 tablespoon parsley, fresh or dried

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon garlic powder

1/2 cup vegetable oil

4 jumbo eggs, slightly beaten

Preparation

01Heat the oven to 350 degrees F. Coat a 24-cup muffin pan with non-stick cooking spray.
02 In a large bowl, mix together all the ingredients, then fill each muffin cup half-way to the top.
03 Place muffin pan into the oven and bake approximately 24 minutes, until golden brown.
