Ingredients

2 teaspoons canola oil

1 medium yellow onion, finely chopped

1 package (10 oz.) frozen chopped spinach, thawed and drained

1 cup shredded Cheddar cheese

6 large egg whites

1 large egg

1/3 cup cottage cheese

1/4 teaspoon ground cayenne red pepper

1/8 teaspoon salt

1/8 teaspoon ground nutmeg

Preparation

01In a nonstick skillet, over medium-high heat, drizzle oil.
02Add onion; sauté for 5 minutes, or until translucent.
03Add spinach and stir for 3 additional minutes, or until spinach is dry. Set aside.
04Preheat oven to 375 degrees F. Lightly coat a nonstick 9” pie pan with cooking spray.
05Sprinkle cheese in the pan. Top with spinach mixture.
06In a medium bowl, whisk egg whites, egg, cottage cheese, red pepper, salt, and nutmeg.
07Pour egg mixture over spinach. Bake for 30-40 minutes or until set. Let sit for 5 minutes. Cut into wedges. Serve warm.
