01Cook ramen noodles according to package directions, reserving 3/4 cup cooking liquid. Drain.
02Heat butter and oil in large skillet over medium-high heat. Add kimchi and sesame seeds and cook, stirring occasionally until tender, about 1 minute. Stir in noodles, Sriracha sauce, soy sauce, mirin and reserved cooking liquid until combined, about 1 minute. Stir in 2 cups cheese until melted. Remove from heat.
03Divide noodle mixture between bowls and top with eggs, green onions, remaining
sesame seeds, nori and remaining cheese. Serve and enjoy.
