Warm spiced paneer is paired with melty cheddar and pepper jack, then wrapped in soft flatbread and served slider-style for easy sharing. Ingredients for Marinade

3 tablespoons plain yogurt

1 teaspoon ginger paste

1 teaspoon garlic paste

1 teaspoon Kashmiri red chili powder

1 teaspoon garam masala

1/4 teaspoon ground turmeric

1 tablespoon dried fenugreek leaves

1 teaspoon kosher salt

Ingredients for Paneer Filling

2 cups paneer, cut into 1-inch cubes

1 small red bell pepper, cut into 1/2-inch cubes

1 small green bell pepper, cut into 1/2-inch cubes

1 medium red onion, cut into 1/2-inch cubes

2 tablespoons oil for cooking

Ingredients for Spiced Butter Topping and Garnish

3 tablespoons unsalted butter, melted

1/2 teaspoon red chili flakes

2 garlic cloves, pressed

1 tablespoon finely chopped cilantro

2 teaspoons sesame seeds

1/4 cup chopped cilantro

Ingredients for Sliders

12 dinner rolls

6 slices mild or medium cheddar cheese

1 cup grated Pepper Jack cheese

1/4 cup thinly sliced red onions

1/2 cup cilantro mint chutney for spreading

Preparation

01To prepare the paneer filling, in a bowl, mix all the marinade ingredients. Add the paneer cubes and gently mix until well coated. Let it marinate for 10 to 15 minutes.
02Heat oil in a pan over medium heat. Add the red onion, red pepper, and green pepper. Cook for 3 to 4 minutes until slightly softened.
03Add the marinated paneer and cook for another 3 to 4 minutes, stirring gently just until the paneer is heated through. Turn off the heat and stir in the cilantro. Set aside.
04Preheat the oven to 400F.
05To make the spiced butter, mix the melted unsalted butter with chili flakes, garlic, cilantro, and sesame seeds. Set aside.
06Slice the dinner rolls in half horizontally. Line the bottom layer with cheddar cheese slices. Spread the warm paneer filling evenly over the cheese. Add the thinly sliced red onions and top generously with grated Pepper Jack cheese.
07Spread chutney on the cut side of the top buns and place them over the filling. Poke holes into the buns and brush generously over the top of the buns.
08Cover with aluminum foil and bake at 400 F for 15 to 20 minutes until the cheese is fully melted and the sliders are heated through.
09Serve warm as pull-apart sliders straight from the pan.
