01Preheat oven to 350°F. Coat a 10-inch quiche dish with cooking spray.
02Evenly spread the salsa on the bottom of the dish. Distribute the chopped artichokes evenly over the salsa. Sprinkle Parmesan cheese over the artichokes. Sprinkle with Monterey jack and cheddar cheese.
03Whisk the eggs in a blender until smooth. Add the sour cream to the eggs and blend until mixed. Pour the egg mixture over the cheeses.
04Bake uncovered for approximately 40 minutes or until set.
