Cheesy Egg Scrambler

Ingredients

1/2 whole wheat pita bread

2 large egg whites

1/4 cup shredded mild cheddar cheese (or Jalapeño or Monterey Jack)

Chopped mushrooms (optional)

Chopped onions (optional)

Chopped green peppers (optional)

Preparation

01Toast pita; set aside.
02Spray small skillet with non-stick cooking spray. Heat over medium heat approximately 25 seconds.
03 Optional: In a small bowl with the egg whites, combine chopped mushrooms, onions or green peppers.
04 In the preheated skillet, scramble egg whites and cheese until egg whites are set and cheese is melted.
05Fill pita pocket with eggs and cheese; serve.
