Veggie Delight Pizza

1 pound pizza dough

1 1/2 cups ricotta cheese

1/2 cup shredded mozzarella cheese

1 tablespoon Italian seasoning

Olive oil

8 ounces cherry tomatoes, halved

1/2 large orange bell pepper, seeded and chopped

1 cup fresh or thawed frozen yellow corn kernels

1/2 large green bell pepper, seeded and chopped

2 cups broccoli florets, cut into small pieces

1 red potato, thinly sliced

1/2 medium red onion, chopped


01Preheat the oven to 425 F.
02Let the pizza dough sit out at room temperature while the oven preheats.
03Lightly grease a rolling pin with olive oil and roll out the pizza dough. Transfer the dough to a baking sheet and gently press the ends of the dough to create a crust.
04Spread the ricotta cheese over the dough but not on the edges of the crust.
05Sprinkle the Italian seasoning atop the ricotta and add the mozzarella cheese to the pizza so it is evenly spread.
06Arrange the vegetables in a rainbow pattern around the circumference of the dough, starting from the edge of the crust inwards in this order; tomatoes, orange bell pepper, corn, green bell pepper, broccoli, red potato, red onion.
07Drizzle olive oil over the vegetables and bake for 15 to 20 minutes, until the edges are golden-brown.
08Let the pizza cool for 2-3 minutes before serving.
