3 cups of cauliflower rice

1 egg, lightly beaten

1 cup shredded mozzarella cheese, divided

1 cup ricotta cheese

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/2 teaspoon dried oregano

1/2 cup cooked spinach

1/4 cup grated Parmesan cheese

1/2 teaspoon crushed red pepper


01Preheat the oven to 450 F. Cook the cauliflower rice in the microwave on high for 6 - 8 minutes, until cooked.
02When cool enough to handle, squeeze as much moisture as you can using a tea towel.
03Transfer the cauliflower rice to a mixing bowl, add egg, 1/2 cup mozzarella, salt, pepper and oregano. Mix until well combined.
04Press the mixture onto a greased, parchment lined baking sheet with your hands, making a thin round pizza crust. Bake for 15 minutes, until golden.
05Remove from the oven and let cool for 5 minutes.
06Scatter ricotta and remaining 1/2 cup mozzarella over the pizza crust. Add spinach and Parmesan and bake for 10 more minutes.
07Serve hot, sprinkled with crushed red pepper.
