Ingredients

1 cup water, warmed

1 tablespoon sugar

1 tablespoon active dry yeast

1 tablespoon olive oil

2 to 2 1/2 cups all-purpose flour

1 teaspoon salt

8 ounces mozzarella cheese, cut into small cubes

1/2 to 3/4 cup pizza sauce

1 cup shredded mozzarella cheese

Optional: pizza toppings of your choice

Preparation

01Warm water to around 105 to110 F. Pour warm water into a large mixing bowl. Add sugar and yeast, and stir to combine. Let mixture sit for 5 minutes, or until it becomes frothy and bubbles form.
02Add olive oil and gently stir to combine.
03Add 2 cups of flour and salt, and mix with a spatula until a ball begins to form (dough will still be slightly sticky). Add more flour as needed to form a dough ball.
04Transfer to a floured surface and knead into a smooth dough, adding up to ½ cup more flour if the dough is sticky.
05Lightly coat a large bowl with cooking spray. Place the dough in the bowl and tightly cover with plastic wrap. Place the bowl in a warm place to rest for about 30 minutes, until the dough doubles in size.
06Preheat oven to 450 F. Coat a large baking sheet or pizza pan with cooking spray.
07Lightly dust a work surface with flour. Punch the dough down, transfer to the work surface, and roll dough into your desired shape. Gently transfer to your prepared pan.
08Leaving about a 1/2-inch around the edge of the crust, line the pizza dough with the mozzarella cheese. Fold the crust over the cheese and press the edges down, sealing the mozzarella cheese in the crust. To ensure the dough doesn't form air pockets, use a fork to prick the dough all around (gently, so you do not poke holes all the way through the crust).
09Bake on the lower rack of the preheated oven for 5 minutes and remove from the oven. If you notice air bubbles forming, poke them with a fork to let the air out.
10Add pizza sauce, cheese, and toppings of choice.
11Bake on the lower rack for about 15 to 20 minutes, until the crust looks crispy and lightly browned.
