Sun Dried Tomato Baked Cheddar with Olives and Almonds

Ingredients

2 tablespoons coarsely chopped Kalamata olives

3 tablespoons chopped sun-dried tomatoes and herbs in olive oil

8 ounce block extra sharp white cheddar cheese

2 tablespoons sliced almonds

1-2 tablespoons fresh basil ribbons, plus more to taste

Crackers or pita chips

Preparation

01Preheat oven to 325°F and line a small baking sheet with parchment paper.
02In a small bowl, stir olives and tomatoes together.
03Place cheddar in center of the baking sheet and top evenly with olive mixture.
04Add sliced almonds evenly atop the cheese.
05Bake for 8-10 minutes, just as the cheese begins to melt and soften.
06Garnish with fresh basil ribbons and serve immediately with crusty toast points, whole-grain crackers or pita chips
