Ingredients

1 (8.5-ounce) box corn muffin mix

1 (14.4-ounce) bag frozen corn, thawed

1 (14.75-ounce) can sweet creamed corn

2 eggs, beaten

1/2 cup unsalted butter, melted

8 ounces sour cream

4 ounces cheddar cheese, shredded

Preparation

01 Preheat oven to 350 degrees. Spray 9x13 baking dish or large round cast iron pan with olive oil spray.
02In a large bowl, mix together corn muffin mix, corn, creamed corn, eggs, butter, and sour cream. Spread evenly in baking dish or cast-iron pan. Bake for 40 minutes.
03Remove dish from oven and sprinkle cheese on top. Change oven temperature to broil. Return dish to oven and broil until melted, bubbling, and golden brown, approximately 3 to 5 minutes.
