Ingredients

1/4 cup butter

1 large yellow onion, thinly sliced

1 tablespoon brown sugar

1 large green bell pepper, diced

3 cloves garlic, minced

Kosher salt and freshly ground black pepper, to taste

12 ounces cream cheese, softened

1 cup sour cream

12 ounces deli sliced roast beef, roughly chopped

1 pound sliced Provolone cheese, chopped

Bagel chips or slice baguette, for serving

Preparation

01Melt butter in skillet over medium heat. Add onion and brown sugar and cook, stirring frequently, until onions are tender golden brown, about 15 minutes. Add green pepper and cook 2 minutes to soften. Stir in garlic and cook additional minute. Season with salt and pepper to taste.
02While vegetables cool, combine cream cheese and sour cream in medium mixing bowl. Beat with electric mixer until smooth and creamy.
03Transfer peppers and onion to bowl of slow cooker. Stir in cream cheese mixture, roast beef and provolone cheese. Cover and cook on high for 1 hour until heated through. Keep warm until ready to serve. Serve with bagel chips or sliced baguette.
