Big Bowl Cheese Dip

Ingredients

5 potatoes, each cut into 12 wedges

5 tablespoons olive oil

1 teaspoon kosher salt

1/4 teaspoon ground black pepper

1/2 cup onion, diced

1 cup beer

2 cups shredded cheddar cheese

2 cups shredded pepper jack cheese

1 1/2 tablespoons taco seasoning

2 tablespoons chopped chipotle pepper in adobo sauce

1 cup sour cream

Preparation

01Preheat oven to 425 degrees F. Line baking sheet with foil or parchment paper. Place potatoes in bowl with oil, salt, and pepper. Toss together then place potato wedges onto sheet pan. Bake approximately 30 minutes till golden brown, turning halfway through cooking.
02 In a medium-sized saucepan, heat onion and beer to a boil. Reduce to a simmer for 4-5 minutes.
03In a bowl, combine cheddar, pepper jack, and taco seasoning. Slowly add handfuls into the beer and mix until melted. Repeat until all the cheese mixture is used. Stir in chipotle and sour cream.
04Serve with potato wedges.
