1 (13.8-ounce) tube refrigerated pizza crust

4 tablespoons olive oil, divided

6 large eggs

2 tablespoons whole milk

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cherry tomatoes, sliced in half

fresh parsley to garnish




01Preheat the oven to 400 F. Lightly grease a large baking sheet.
02Unroll the pizza dough and spread it onto the baking sheet. Gently pierce the dough with a fork and brush with 2 tablespoons of olive oil. Bake for approximately 5-6 minutes. Set it aside.
03In a large bowl, whisk together the eggs, milk, salt, and pepper. Add the remaining 2 tablespoons of olive oil to a pan over medium heat. Add the eggs and gently scramble them, until just about set.
04Pour the eggs evenly over the pizza crust. Add the mozzarella and cheddar cheese. Broil in the oven for approximately 5 minutes, until the cheese is melted and lightly golden.
05Top with sliced tomatoes and fresh parsley. Cut into slices and serve.
