About 4-Cheese Rotel Dip

This rich and creamy appetizer combines four different cheeses with the bold flavors of Rotel tomatoes and jalapenos. Ingredients for Rotel Dip

1 pound ground beef

9 ounces chorizo

1 can Rotel (drained)

16 ounces American cheese block (melted)

8 ounces sharp cheddar

4 ounces white sharp cheddar

8 ounces cream cheese

1/4 cup heavy cream

1/3 cup milk

1 small red onion

1 jalapeno

1/2 tablespoon garlic paste

1/2 tablespoon all-purpose seasoning (salt, pepper, garlic)

1 teaspoon each: chipotle chile powder, garlic powder, cumin, oregano

Ingredients for Pita Chips

3-5 whole pita rounds

2-3 tbsp olive

1 tsp each: salt, pepper, garlic powder


01To make the pita chips, cut the pita bread into small triangles then add into a large bowl. Drizzle with olive oil and season with the listed spices. Toss until well coated.
02Add to a baking sheet and baked at 350 F for 7-10 minutes.
03Finely dice onion, and jalapeno.
04In a large skillet, sauté ground beef and chorizo, then add in onion, jalapeno, and garlic paste.
05Stir in the listed spices then cook until browned and drain excess oil if present.
06Preheat oven to 375 F.
07In a 9x11 or similar baking dish/ cast iron add in all the cheeses, cooked meat, and Rotel.
08Bake for 30 minutes or until everything is melted and well combined.
09Stir every 10 minutes. Stirring in the milk and heavy cream at the 15-20 minute mark.
10Once done, allow to cool, then serve warm with fresh pita chips.
