1/2 cup strawberry gelatin, prepared and cut into 1/2 inch cubes

1/4 teaspoon chia seeds, soaked in water for 20 minutes, then drained

1 ounce thin vermicelli noodles, cooked and cooled

2 cups milk

1 cup frozen sliced peaches

1 cup frozen strawberries

2 cups vanilla ice cream

12 pistachios, finely chopped (optional garnish)

4 cherries (optional garnish)


01Spoon half of the cubed strawberry gelatin evenly into two large glasses, then layer each serving with half the soaked chia seeds, then half the vermicelli noodles. Set aside.
02In a blender, combine the milk with the frozen peaches and strawberries. Blend on medium speed until smooth and uniform in color, about 1-2 minutes.
03Slowly pour half of the milk mixture into each of the large glasses, over the gelatin, chia seeds, and vermicelli noodles.
04Scoop half the ice cream into each of the glasses.
05Garnish each glass with half the chopped pistachios and the cherries. Serve with a spoon and straw and enjoy!
