4 slices sourdough bread

1/2 cup part-skim ricotta cheese

Sweet combinations:

Strawberries + mini chocolate chips

Blueberries + walnuts + honey

Orange slices + raspberries + pistachios

Banana slices + almonds + honey

Figs + walnuts + honey

Apples + cinnamon

Pineapple + coconut

Savory combinations

Tomato slices + basil + black pepper

Watercress (or arugula) + cherry tomatoes

Sautéed mushrooms + thyme

Pesto + walnuts

Smoked salmon + dill

Cucumber + radish


01Lightly toast bread. Use a spoon to place the ricotta cheese on the bread. Do not press down for the cheese to stay light and creamy. Spread evenly over the slices of toast. If the ricotta cheese is too wet, drain it in small colander over a bowl in the refrigerator. This will remove any excess liquid.
02Add toppings of your choice.
