Cinnamon Swirl Yogurt French Toast

2 whole medium eggs

4 egg whites

1 cup milk

1/2 teaspoon cinnamon

8 pieces cinnamon swirl bread

2 cups plain yogurt

5 tablespoons maple syrup

2 cups fresh fruit (grapes, strawberries, oranges, blueberries and beaches), coarsely chopped


01Combine the topping ingredients, except for fruit in a small mixing bowl and refrigerate.
02In a medium bowl, beat together eggs, milk and cinnamon.
03Preheat a non-stick skillet over medium heat and lightly coat with non-stick cooking spray.
04Dip each piece of break into the egg mixture and coat thoroughly. Place in skillet for about 2 minutes on each side.
05To serve, cut warm French toast on the diagonal. Arrange on plate.
06Top with fruit, then yogurt mixture and fruit.
