01To make the roasted bell pepper spread, light the burner to medium heat and arrange the pepper directly above the flame with tongs. Roast it for a few minutes, turning the pepper with the tongs as the skin blisters, until it is roasted evenly on all sides.
02In a blender, add the roasted pepper, garlic, onion, salt, and pepper. Blend well until it becomes a purée.
03Slice the avocados into thin slices.
04Set two slices of bread on a plate. Add slices of half an avocado onto one slice and spread the roasted pepper spread on the other.
05Add 4 slices or 3/4 cup of shredded cheese atop the avocado.
06Add a 1/2 tablespoon of butter to a pan over medium heat. Once melted, assemble the sandwich and place it in the pan. Close the lid to allow the cheese to melt. Flip as needed every few minutes to allow the cheese to melt without burning the bread.
07Remove and repeat the steps for the three remaining sandwiches, and enjoy!
