About Ratatouille Sub

A Ratatouille Sub is a culinary masterpiece that brings together seasonal vegetables and the comfort of a sandwich. This sub is a symphony of flavors and textures, featuring layers of vibrant roasted vegetables such as eggplant, zucchini, squash, and tomatoes. These vegetables are baked to tender perfection with delicious mozzarella cheese, which elevates the dish. Once cooked, the Ratatouille is nestled between mouthwatering garlic bread, delivering a burst of gourmet flavors in every bite.

Ingredients for Ratatouille

2 skinny eggplants, thinly sliced

2 zucchini, thinly sliced

2 small yellow squashes, thinly sliced

2 Roma tomatoes, thinly sliced

1 tablespoon oregano

1/2 tablespoon parsley

1/2 tablespoon crushed red pepper flakes

16 ounces fresh mozzarella, thinly sliced

2 cups red pasta sauce, jarred or homemade

3 tablespoons garlic paste

1 tablespoon chili oil (or regular)

1 serrano peppers, finely diced

1/2 cup red onion, finely diced

1/2 cup parmesan cheese

Salt & pepper per taste

Ingredients for Garlic Bread and Garnish

6 small loaves of bread

8 tablespoons butter

8 garlic cloves

1 tablespoon oregano

1/2 tablespoon garlic powder

Salt & pepper per taste

Green Onion for garnish

Fresh Parsley for garnish

Preparation

01Preheat the oven to 375 F.
02Very thinly slice the eggplant, zucchini, and yellow squash using a mandoline or knife. Use a knife to slice the tomatoes and mozzarella.
03On a baking sheet or tray, season all the sliced vegetables with dry basil, dry oregano, dry parsley, crushed red pepper flakes, salt, and black pepper. Set aside while making the sauce.
04Add some oil to a pan. Once hot, add in your red onion, serrano and garlic paste. Cook for a minute and add in your sauce. Pour sauce into baking tray.
05Add the zucchini, yellow squash, eggplant, tomatoes, and mozzarella in alternating slices into a baking pan. Sprinkle half of the parmesan cheese on top. Cover the tray with foil and bake for about 30 minutes.
06To make the garlic bread, in a bowl, mix the butter, garlic cloves, oregano, and garlic powder. Evenly spread the garlic butter onto each piece of bread and set aside.
07After 30 minutes, remove the foil off of the ratatouille pan. Bake for another 10 minutes or until all of the vegetables are soft.
08During those 10 minutes, put the garlic bread into the oven.
09To assemble the sub, add as much ratatouille as you desire onto one side of your garlic bread. Garnish with extra parmesan cheese, green onion, and fresh parsley.
10Close the hot sub, cut in half, and enjoy!
