Peppermint Milk Pudding

Ingredients

2 tablespoons cold water

1 tablespoon unflavored gelatin powder

2 1/2 cups 1% milk

1/4 teaspoon peppermint extract

6 mint sprigs, for garnish

3 sugar-free peppermint candies, crushed (optional)

Preparation

01Whisk water and gelatin together in a small bowl until combined. Let stand for 1 minute to soften.
02Meanwhile, bring milk and peppermint to gentle simmer in small saucepan over medium-high heat, about 4 to 5 minutes. Remove from heat and whisk in gelatin mixture until dissolved.
03Divided milk mixture evenly between 6 4-ounce jars or glasses. Refrigerate for 4 hours or overnight until set.
04Top each pudding with 1 mint sprig and crushed candies (if using). Serve and enjoy.
