Pepper Jack Stuffed Burgers with Poblano Cream Sauce

1 1/2 pounds ground beef

Kosher salt and freshly ground black pepper

4 ounces pepper jack cheese, grated

2 poblano peppers

8 ounces cream cheese, room temperature

2 tablespoons mayonnaise

1 clove garlic, minced

8 slices bacon, cooked

4 burger buns


01Preheat grill to medium-high heat and coat with oil. Season ground beef with salt and pepper and gently mix to combine. Divide beef into 8 patties. Sprinkle 1 ounce pepper jack cheese in center of four patties and top with remaining four patties, pinching around edges to seal.
02Grill burgers 7-9 minutes per side, until caramelized on outside and cooked through to desired temperature. While burgers cook, grill poblanos until charred and tender, about 5 minutes. Remove burgers from grill and let rest 5 minutes.
03While burgers cook, prepare poblano cream sauce: Carefully remove seeds and stem from grilled poblanos and finely chop. Combine poblanos with cream cheese, mayonnaise and garlic. Season with salt and pepper to taste.
04Top burgers with poblano cream sauce and bacon.
