Ingredients

4 (6-to 8-ounce each) boneless, skinless chicken breast halves

1/4 cup barbecue sauce, plus additional barbecues sauce for serving

4 small red potatoes, thinly sliced (keep potatoes in individual groups)

1 green (or red) bell pepper, seeded and sliced into 8 rings

1/2 cup thinly sliced green onions, white and green parts

Salt (optional)

Freshly ground black pepper (optional)

2 cups cheddar cheese, shredded

Preparation

01Heat the oven to 375 degrees F.
02 For each packet: Place a sheet of heavy-duty aluminum foil, about 12 by 12 inches, on a work surface. Place one chicken breast half in the center of the foil. Brush one tablespoon of the barbecue sauce over the chicken. Top with one group of sliced potato, two bell pepper rings, and 2 tablespoons sliced green onion. Season to taste with salt and pepper.
03 Bring the two opposite sides of the foil together and fold down, sealing tightly. Roll up the short ends of the packet to seal tightly. Place the 4 packets on a large-rimmed baking sheet.
04 Bake for 35 minutes. With scissors, carefully open each packet and peel back the foil. Sprinkle 1/2 cup of the cheese on each serving. Return to the oven for approximately 3 minutes, or until the cheese has melted.
05 Place one packet on each serving plate (or carefully slide the contents onto the serving plate). Serve with additional barbecue sauce, if desired.
