Ingredients

6 ounces ground beef

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons olive oil, divided

1/2 packet taco seasoning

1/4 cup water

2 tablespoon butter, softened

4 slices bread

2 tablespoons sour cream, divided

2 cups shredded Mexican cheese, divided

4 slices of jalapeno pepper

2 tablespoons salsa

2 tablespoons tomatoes, diced

1 stalk green onion, chopped

1 tablespoon black beans

1/2 teaspoon cilantro, chopped

3 tortilla chips, crumbled

Preparation

01Season ground beef with salt and pepper.
02In a large skillet, add 1 tablespoon of olive oil and heat to medium-high.
03Add beef to skillet and cook until browned.
04Decrease heat to medium-low.
05Sprinkle in taco seasoning and water and mix well until beef is coated. Simmer for 3 minutes.
06Using a slotted spoon, transfer beef from the skillet to a paper-towel-lined bowl. Clean skillet.
07Spread 1/2 tablespoon butter on one side of each slice of bread.
08On the other side of each slice, spread ½ tablespoon sour cream.
09Add 1/2 cup cheese to the sour cream side of one slice of bread.
10In a medium mixing bowl, add ground beef, jalapenos, salsa, tomatoes, green onions, black beans, and cilantro. Mix well and set aside.
11In the skillet, add the remaining 1 tablespoon of olive oil and heat to medium.
12Add one slice of bread to the skillet, butter side down.
13Scoop up half of the meat mixture and spread evenly onto the bread in the skillet.
14Add tortilla chips and the remaining ½ cup of cheese to the bread on the skillet.
15Place the other bread slice, sour cream down, on the loaded slice of bread in the skillet.
16Carefully flip the sandwich, and gently press it with a spatula. Let the sandwich cook on each side for about 2 minutes or until golden brown and cheese is melted.
17Repeat steps to make additional sandwich.
