Ingredients

2 large eggs

8 ounces mozzarella cheese, shredded

1 tablespoon unsalted butter

2 tablespoons almond flour

Kosher salt and freshly ground black pepper

Preparation

01Preheat waffle maker and whisk eggs until well beaten. Set aside 1/4 cup of shredded mozzarella cheese.
02In large bowl, combine together eggs, flour and cheese. Season with salt and pepper.
03Once waffle maker is heated, coat griddle with butter then add a sprinkle of remaining mozzarella directly to griddle to add crispy coating to waffle. Pour half the waffle mixture into waffle maker, cook for 2 to 3 minutes, or until automatic timer goes off. Remove fluffy waffles from the griddle once they are golden brown on the outside.
04Repeat step 3 with remaining batter. Serve with your favorite toppings or fried egg.
