Gluten-Free Jalapeño Popper Taquitos

Ingredients

4 ounces cream cheese, softened

2-3 jalapeños, seeded and diced

3 green onions, diced

4-5 slices cooked bacon, chopped

8 slices cheddar cheese

Kosher salt and freshly ground black pepper

Preparation

01Preheat oven to 350°F and line baking sheet with silicone baking mat or parchment paper.
02In large bowl, combine cream cheese, jalapeños, scallions and bacon. Season with salt and pepper, to taste.
03Neatly line baking sheet with cheese slices with even spacing in between. Bake for approximately 5 to 7 minutes, until outside edges are crisp and golden brown. Use spatula to lift edges to ensure they are easy to assemble.
04Let cool at least 1 to 2 minutes before adding a spoonful of cream cheese mixture to each crispy cheese slice. Pat down filling and gently roll cheese into a log shape before indulging.
