Ingredients

1 (16-ounce) loaf Irish soda bread, cut into 1-inch cubes

4 tablespoons unsalted butter, melted, plus more for greasing

2 cups milk

1 cup, plus 1 tablespoon sugar, divided

3 large eggs

1 1/2 teaspoons pure vanilla extract

1/2 teaspoon kosher salt

1 cup heavy cream

Caramel sauce, for serving

3 cups strawberries, halved

Preparation

01Preheat oven to 350°F and grease a 9x13-inch baking dish with butter. Place bread cubes in an even layer into prepared baking dish. Drizzle with butter.
02Whisk milk, 1 cup sugar, eggs, vanilla and salt together in large bowl until combined. Pour milk mixture over bread cubes. Allow bread cubes to soak for 10 minutes. Bake until set, and golden-brown, about 40 minutes. Let cool for 20 minutes.
03Meanwhile, whisk heavy cream and remaining sugar together in large bowl until stiff peaks form.
04Slice bread pudding and serve with whipped cream, caramel sauce and strawberries
