1 fresh pineapple, peeled, cored and cut into 1/2-inch thick rings
3 tablespoons ground cinnamon
Vanilla ice cream, for serving
Fresh whipped cream, for serving
1/2 cup coconut flakes, toasted
01Preheat grill or grill pan to medium-high heat and coat with oil. Combine butter and sugar in medium saucepan over medium heat. Whisk until butter is melted and sugar is dissolved. Whisk in heavy cream and salt and bring to simmer. Simmer 3 minutes and remove from heat.
02Sprinkle pineapple slices with cinnamon and grill until tender and grill marks appear, about 90 seconds per side.
03Transfer pineapple slices to serving plates and top with vanilla ice cream. Drizzle warm brown sugar caramel sauce over ice cream. Top with whipped cream and garnish with toasted coconut flakes.
