Ingredients for Waffles

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 tablespoon ground ginger

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

3 tablespoons brown sugar

2 large eggs

1 3/4 cups milk

1/3 cup maple syrup

1/4 cup melted butter (plus extra for greasing the waffle iron)

1 teaspoon vanilla extract

4 ounces cream cheese, softened

2 tablespoons butter, softened

1 cup powdered sugar

2–3 tablespoons milk

1/2 teaspoon vanilla extract

Pinch of salt

Preparation

01To make the waffle batter, in a large bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, salt, and brown sugar.
02In another bowl, whisk together the eggs, milk, maple syrup, melted butter, and vanilla extract.
03Pour the wet ingredients into the dry ingredients and whisk until just combined.
04To cook the waffles, preheat your waffle iron and lightly brush it with butter. Note that this recipe makes 4-6 large waffles or 14-16 mini waffles.
05Pour the batter and cook until golden and crisp, about 3–4 minutes per waffle. Transfer to a plate or wire rack and keep warm while you make the glaze.
06To make the cream cheese drizzle, in a medium bowl, beat together the cream cheese and butter until smooth. Add in the powdered sugar, milk, vanilla, and a pinch of salt.
07Whisk it all until smooth and pourable. Add more milk as needed for your preferred drizzle consistency.
08Drizzle the warm waffles generously with the cream cheese glaze.
09Sprinkle with a little powdered sugar, fruit, or crushed up gingerbread cookies.
