Ingredients

2 pounds parsnips

1 medium shallot

2 cloves garlic, peeled

3 tablespoons olive oil

1/2 – 3/4 cup heavy cream

1/2 – 3/4 cup heavy cream

2 tablespoons unsalted butter

salt and pepper, to taste

dash nutmeg

Preparation

01Preheat oven to 400 degrees.
02Peel parsnips and chop into 1-inch pieces.
03Peel and trim the shallot. Slice in half.
04Place the parsnips, shallots, and garlic on a baking sheet. Sprinkle with olive oil, salt, and pepper.
05Bake for 20-25 minutes.
06Into a food processor add the parsnips, shallot, and garlic.
07Add in ½ cup heavy cream, ½ cup chicken stock, and butter and pulse to puree ingredients.
08Check consistency, if too thick add a bit more cream and chicken stock.
