Ingredients for French Toast Roll Ups
2 1/2 tablespoons unsalted butter, divided
2 tablespoons brown sugar
1/4 cup milk
1 teaspoon pure vanilla extract
1/2 cup cinnamon crunch cereal, crushed
8 slices soft whole wheat bread, crusts cut off
Ingredients for Maple Yogurt Dip
1 1/2 cups Greek yogurt
1/3 cup maple syrup
1/4 teaspoon vanilla extract
01Preheat the oven to 350 F. Grease a small baking sheet with 1/2 tablespoon butter and set aside.
02In a small bowl melt 2 tablespoons of butter. Mix in the brown sugar and set aside.
03In another small bowl whisk together the eggs, milk, and vanilla extract. Set aside.
04Add the crushed cinnamon crunch cereal to a third small bowl. Set aside.
05Using a rolling pin, roll the crustless bread as thin as possible, about ⅛-inch thick. Spread a thin layer of the butter and brown sugar mixture on top of the bread. Tightly roll and set aside, seam-side down. Repeat with each slice of bread.
