Ingredients

1 cup plain Greek yogurt

2 tablespoons hot sauce, adjust amount to suit your heat preference)

1 1/2 cups sharp Cheddar cheese, divided

8 ounces canned black beans, drained, rinsed, and mashed

8 ounces salsa

2 tablespoons parsley (or scallions or chives), chopped, optional for garnish

Preparation

01Heat the oven to 350 F or start slow cooker on high. Grease 9-inch pie pan or slow cooker.
02In a small mixing bowl, combine yogurt, hot sauce, and 1/2 cup of cheese. Spread on bottom of pan or slow cooker.
03In another small mixing bowl, combine beans and salsa. Layer on top of the yogurt mixture.
04Sprinkle remaining 1 cup of cheese on top of bean and salsa mixture. Bake at 350 F for 20 minutes in the oven or for 1 hour in the slow cooker. If using the slow cooker, turn to warm.
05Garnish with parsley. Serve with chips, bread, or vegetables.
