1 cup diced red pepper
1 cup frozen sweet corn kernels, thawed
2 jalapenos, diced
1 cup packed shredded mozzarella cheese
1 cup packed shredded pepper jack cheese
1/4 cup cilantro, finely diced
1 teaspoon ground cumin
1 teaspoon chaat masala
6 tablespoons butter
8 Sourdough bread slices
Red chili flakes (optional)
01Butter the bread slices and broil on a baking sheet for 3 to 4 minutes or just until the bread starts to get toasty.
02Take out the bread and generously spread the cheese mixture on top of the bread, pressing the mixture down lightly with a spoon.
03Return the baking tray back to the oven and broil on 400 F degrees for 4 minutes as the cheese melts and starts to get bubbly and lightly brown.
04Take out the baking tray and sprinkle with red chili flakes. Serve hot.
