About Cheesecake Yogurt Breakfast Parfaits

Cheesecake Yogurt Breakfast Parfaits are a delightful and indulgent treat that combines the creamy richness of the flavors of a cheesecake with the lightness of yogurt. These parfaits are layered with velvety yogurt and a medley of luscious toppings. The smooth and decadent cheesecake yogurt offers a hint of sweetness and the unmistakable essence of cheesecake, balancing the flavors perfectly. Whether enjoyed as an afternoon or evening treat or a wholesome way to start the day, these parfaits provide a scrumptious fusion of flavors.

Ingredients

2 cups vanilla Greek yogurt

4 ounces cream cheese, softened

3 teaspoons honey, divided

1 teaspoon lemon juice

1 teaspoon lemon zest

1 1/2 cups bran cereal (such as wheat flakes, raisin bran, etc)

1 teaspoon cinnamon

1 1/2cups fresh or frozen/thawed fruit

Preparation

01In a bowl with a hand mixer, whip together the yogurt, cream cheese, 1 teaspoon honey, lemon juice, and lemon zest until combined and smooth. Transfer mixture to a zip top bag and cut a small hole in one corner to create a piping bag; Set aside.
02In another bowl combine the cereal, remaining honey, and cinnamon, stir to combine.
03In 4 large glasses or small cereal bowls, “pipe” a layer of yogurt cheesecake mixture, add layers of cinnamon cereal and fruit and repeat, finishing with fruit and yogurt cheesecake cream on top as garnish for each parfait. Serve immediately or store lightly covered in fridge for up to 1 hour. The cereal becomes soft like cheesecake crust as the parfaits sit.
