Ingredients

1 1/4 cups honey roasted peanuts

1 cup sweetened shredded coconut

4 1/2 cups crisp rice cereal

1/2 cup butter

3/4 cup light brown sugar

1/2 cup light corn syrup

4 pints ice cream (any flavor)

Preparation

01Line a 9-by-13-inch pan with parchment, leaving parchment hanging over two edges.
02Coarsely chop peanuts and coconut in a food processor by pulsing 10 to 12 times. Transfer to a large bowl with the crisp rice cereal.
03In a saucepan, combine the butter, sugar and corn syrup and bring to a boil. Boil for 3 minutes and pour over dry ingredients. Toss to coat evenly. Press half the mixture into the prepared pan and freeze until cold, about 10 minutes.
04Spread softened ice cream evenly over cereal crust and freeze until firm, about 1 hour. Remove and quickly top with remaining cereal mixture. Refreeze for at least 4 hours. When ready to serve lift out of pan using parchment overhang. Cut into 1 1/2-by-3-inch squares and serve.
