02Cut cauliflower into florets and place in a food processor. Pulse until the cauliflower is the texture of rice.
03In a large, microwave-safe bowl, add the cauliflower and microwave on high, and uncovered for 10 minutes, making sure to mix thoroughly every 2 to 3 minutes.
04Let the cauliflower cool for 5 minutes, then add the eggs, cheese, and seasoning. Mix well.
05Line a baking sheet with parchment paper. Shape the cauliflower mixture into bread-like shapes about 1/3 inch thick.
06Bake for 15 minutes or until golden brown.
07Remove from the oven and let cool.
08Gently remove cauliflower bread from parchment paper.
09In a large skillet, heat 1 tablespoon of olive oil over medium heat.
10Add 2 slices of the cauliflower bread (the side that was directly on the parchment paper) to the skillet and press down firmly with spatula. Cook for 2 minutes or until golden brown.
11Flip both slices of the cauliflower bread, press down firmly with the spatula, and cook for 2 minutes.
12Add 2 slices of cheese to 1 slice of cauliflower bread then place the other slice of cauliflower bread on top. Cook until the cheese is melted. Repeat three more times with the remaining ingredients.
