01In a large skillet, melt butter over medium heat. Add the cauliflower rice and garlic powder; stir. Cook cauliflower for about 5 to 7 minutes until tender and moisture is released. For the cauliflower rice, use purchased pre-riced cauliflower rice or use a cheese grater or food processor to rice 1 large head of cauliflower.
02Don’t overcook or cauliflower or it will be mushy.
03Turn the heat to low and stir in the cheddar cheese, milk, and cream cheese. Continue to stir until the cheese has melted. Serve immediately.
