Ingredients for Chicken Marinade

6 large chicken breasts

1 tablespoon olive oil

1 tablespoon blackened seasoning

1 tablespoon salt free garlic herb seasoning

1/2 tablespoon garlic powder

1/2 tablespoon onion powder

1 tablespoon black pepper

1 teaspoon cayenne pepper

1 teaspoon smoked paprika

Ingredients for Stuffing

2 tablespoons butter

1 tablespoon olive oil

1 tablespoon minced garlic

2 cups spinach

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup softened cream cheese

3 tablespoons roasted garlic

1/2 tablespoon rosemary

1/2 tablespoon thyme

1/2 tablespoon sage

1-2 tablespoons spice blend

1 cup shredded mozzarella

1 cup parmesan, freshly grated

Preparation

01Using a knife, slit 3-4 inch deep pockets at the top of the chicken breast.
02In a small bowl, combine the chicken marinade seasonings. Set aside 1-2 tablespoons of the blended spices for stuffing.
03Drizzle olive oil onto chicken breasts and rub in the blended spices. Make sure all sides and inside are coated with the blend.
04In a large tray, cover marinated chicken and refrigerate for 20 minutes.
05In a saucepan, set heat to medium-high, add butter, minced garlic, chopped spinach, salt, black pepper. Cook for 5 minutes or until spinach shrinks. Set aside.
06In a small bowl, combine cooked spinach, cream cheese, roasted garlic, thyme, sage, rosemary, remaining spice blend, mozzarella. Stir until well combined.
07Remove chicken from refrigerator.
08Using a piping or ziplock bag with a small slit, add in spinach mixture. Pipe into the chicken breast.
09In a skillet, set heat to medium-high, add olive oil and butter. Once pan begins to slightly smoke, sear chicken breasts for 3-5 minutes or until charred/blackened.
10Once seared, remove chicken from heat and add 4-7 small knobs of butter.
11Sprinkle grated parmesan onto chicken breasts.
12Place into oven at 400 degrees for 15-20 minutes or until chicken is fully cooked.
13Remove from oven and serve with sides of choice. Recommended sides; dirty rice and steamed broccoli.
